Herb Pistachio Pasta

Ingredients
Sauce:
1 cup Setton Farms Raw Pistachio Kernels (plus extra for garnish)
4 cups fresh leafy greens
1 cup fresh basil leaves
⅓ cup fresh mint leaves
¾ cup extra virgin olive oil
4-5 cloves fresh garlic
½ grated parmesan cheese
2 tbsp lemon juice
½ tsp salt
Additional Ingredients:
16 ounces pasta of your choice
Fresh dill for garnish
Extra parmesan cheese if desired
Method
1) Prepare your pasta of choice according to the directions on the box. Drain and reserve about ½ cup of pasta water - set aside.
2) In a food processor or high speed blender, blend together all ingredients for the sauce until smooth.
3) Add sauce to cooked pasta along with pasta water and toss until everything is combined.
4) Garnish with fresh dill and extra parmesan cheese as desired.
