Pistachio Chocolate Lava Cakes

Ingredients
½ cup unsalted butter, cubed
6 oz chocolate, melted
2 eggs
2 egg yolks
1 tbsp flour
½ cup Setton Farms Dry Roasted with Sea Salt Organic Pistachios, shelled & blended
½ cup Setton Farms Dry Roasted with Sea Salt Organic Pistachios, shelled & chopped
Sea salt for topping
Directions
1) Preheat oven to 450°F.
2) Lightly grease four ramekins with oil or butter and set aside.
3) Melt the chocolate in the microwave in 30-second intervals, stirring in between. Once fully melted, mix in the cubed butter until smooth.
4) Add eggs and egg yolks to the chocolate mixture, whisking until thoroughly combined.
5) Stir in the blended pistachios and flour, mixing until smooth.
6) Evenly divide the batter into the prepared ramekins.
7) Bake for 10-15 minutes: 10 minutes for a gooey lava center and 15 minutes for a firmer texture.
8) Remove from the oven and sprinkle with chopped pistachios and a pinch of sea salt. Let sit for 1-2 minutes before serving warm.
