Tomato Pear Carpaccio with Pistachio Dressing

Ingredients

1/2 cup Setton Farms Salt & Pepper Seasoned Pistachio Kernels
4 tomatoes (the more varieties, sizes, and colors of tomatoes, the better!)
1 small pear
3 tbsp olive oil
1 tbsp honey
1 tbsp white wine vinegar
Pinch of salt

Directions

1) For the dressing, grind the pistachios on a food processor or a blender.
2) Place the ground pistachios in a small bowl, add the olive oil, honey, white vinegar, salt, and stir well with a spoon. Taste and adjust as necessary.
3) Slice the tomatoes and the pear very thinly and arrange on a plate, season with a pinch of sea salt.
4) Drizzle pistachio dressing on top and enjoy!
