Pistachio Strawberry Shortcake in a Jar

Ingredients

Makes 3 jars
3 cups diced strawberries
1/4 cup sugar, divided
1 tbs freshly squeezed lemon juice
1 cup heavy cream or whipping cream
1 cup Setton Farms Raw Pistachio Kernels chopped, divided
6 sponge cake dessert shells, or 1 sponge cake

Directions

1) Place strawberries in a bowl, add 2 tbsp of the sugar and the lemon. Mix well and set it aside.
2) Whip the heavy cream with the remaining 2 tbsp of sugar with a hand mixer or stand mixer until medium peaks form.
3) Gently fold in 1/2 cup of the chopped pistachios into the whipped cream
4) Set aside 2 tbsp of the remaining pistachios.
5) To assemble the strawberry shortcakes place one dessert shell at the bottom of a jar or cup.
6) To layer the dessert cup, add 1/4 cup of strawberries to the dessert shell, add 1/4 cup of pistachio whipped cream, add 2 tbsp of chopped pistachios, add another dessert shell top with 2 tbsp of strawberries and sprinkle with the chopped pistachios you set aside.
7) Repeat with the rest of the cups or jars.
8) If you are using a sponge cake, cut it into pieces and layer it into the dessert.
