Baked Pistachio Chocolate Chip Oatmeal

Ingredients

1/2 cup oatmeal
1/4 cup of Setton Farms Organic Dry Roasted with Sea Salt Organic Pistachios
1/4 cup Greek yogurt
2 tbsp raw honey
1/2 cup milk
1 tsp baking powder
1 tbsp Greek yogurt for oatmeal filling
1 tbsp dark chocolate chunks or chips
pistachio flour for topping*

Directions

1) Remove the shells from the pistachios
2) Blend all ingredients
3) Pour mixture into an oven-safe ramekin
4) Top with chocolate chips and pistachio flour
5) Bake at 350 F for 15 minutes or microwave for 1.5 minutes
6) To make pistachio flour, lightly blend the pistachios (with shells removed) for ~15 seconds.
