Pistachio and Herb Rice Salad

Recipe by:


2 cups salted water
1 cup long grain brown rice
2-3 tablespoons Setton Farms Pistachio Oil
2 tablespoons fresh lemon juice
½ teaspoon sea salt, plus to taste
¼ teaspoon finely ground black pepper
2 tablespoons fresh basil, finely chopped
2 tablespoons fresh mint, finely chopped
2 tablespoons fresh dill, finely chopped
¼ cup red onion, finely chopped
½ cup Setton Farms Garlic and Onion Pistachios, roughly chopped
½ cup finely shredded purple cabbage
8-10 cherry tomatoes, halved
1 carrot, shredded


1) Bring water to a boil and add rice. Cook according to package. Set aside to cool completely.
2) Place cooled rice in a large bowl. Drizzle with Setton Farms Pistachio Oil, lemon juice and add salt and pepper. Toss to coat. Fold in basil, mint and red onion. Toss to coat.
3) Fold in Setton Farms Garlic and Onion Pistachios and fold in cabbage, tomatoes and carrot. Let rest in refrigerator 1 hour and then at room temperature about 30 minutes before serving.
