Grilled Artichokes with Spicy Pistachio Sauce

Ingredients
4 artichokes
2 teaspoons neutral tasting oil
Dash sea salt
Dash pepper
Spicy Pistachio Sauce Ingredients:
1/2 cup Setton Farms Buffalo Wings Seasoned Pistachio Kernels
2 cloves garlic
1/2 cup fresh parsley
1 tablespoon lemon juice, plus zest of 1/2 lemon
1/3 cup olive oil
1/4 teaspoon sea salt
1/4 teaspoon finely ground black pepper or cayenne
1/4 teaspoon sea salt
1/4 teaspoon finely ground black pepper or cayenne
Directions
1) Bring large pot of salted water to a boil.
2) Meanwhile, trim tips of artichoke leaves with kitchen scissors and peel stems slightly if stems are attached. Add artichokes to the pot and cook until tender, about 15-20 minutes.
3) Remove from water and drain. Slice artichokes in half and set aside. Scoop out choke if soft enough.
4) Meanwhile, for spicy pistachio sauce, add Setton Farms Buffalo Pistachios, garlic, parsley, lemon juice, olive oil, salt and pepper or cayenne to food processor or blender. Pulse together until pistachios are well chopped, or on lowest setting in blender. Set aside.
5) Heat grill over medium heat. Brush sliced artichokes with oil and place flat side down. Grill until char marks appear, about 5-10 minutes.
6) Remove from heat and drizzle generously with spicy pistachio sauce. Garnish with additional pistachios and parsley if desired. Serve warm.
