Fennel Salad with Pistachios and Oranges

More Than Spicy

Recipe by:


1/4 cup chopped Setton Farms Salt & Pepper Seasoned Pistachio Kernels
1/2 cup extra virgin olive oil
1 tbsp honey
Pinch of salt
1 large fennel bulb, trimmed and thinly spliced
1/2 orange, peeled
1/2 orange juiced
1 medium sized burrata
A few leaves of fresh mint


1) For the salad dressing mix olive oil, chopped pistachios, honey and a pinch of salt.
2) Place the sliced fennel in a salad bowl, pour in the dressing and give everything a good stir. Add the orange juice and adjust salt to taste.
3) Place burrata on a large plate, serve the fennel salad around it and garnish with sliced oranges and fresh mint.
