Tostilocos with Pistachio Pico de Gallo

More Than Spicy

Recipe by:


1/3 cup Jalapeño Seasoned Pistachio Kernels, chopped
1/4 medium red onion, finely chopped
1/2 cucumber, finely chopped
1/2 small sized jalapeño, seeded and finely chopped
1/2 medium avocado, cubed
1 lime, juiced
2 tbsp. Chopped cilantro
2 tbsp. Pistachio olive oil
Salt to taste
1 bag of your favorite tortilla chips


1) Toss avocado, onion, pistachio kernels, jalapeño, lime juice, pistachio olive oil and cilantro in a small bowl to combine, season with salt and adjust to taste. Cover and chill for an hour
 to allow flavors to come together.
2) Open your bag of chips and use it as your bowl - do not remove the chips from the bag. Then, layer on the pistachio pico de gallo on top, garnish with cilantro, and enjoy!
3) Tip: prepare just before eating to avoid the tostilocos becoming soggy.
